Ingredients

  • 2 lbs boneless skinless chicken thighs
  • 3 tablespoons olive oil
  • 1/4 cup honey
  • 3 tablespoons fresh lime juice
  • 1 tablespoon lime zest
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili powder
  • 2 tablespoons chopped cilantro for garnish
  • Lime wedges for serving


Instructions

  1. In a large bowl, whisk together olive oil, honey, lime juice, lime zest, garlic, paprika, cumin, salt, black pepper, and chili powder.
  2. Add chicken thighs and toss to coat evenly.
  3. Cover and marinate in the refrigerator for at least 30 minutes or up to 4 hours.
  4. Preheat grill to medium-high heat.
  5. Remove chicken from marinade and place on the grill.
  6. Cook for 5-7 minutes per side until nicely charred and the internal temperature reaches 165°F (74°C).
  7. Brush with remaining marinade during the final minutes of grilling if desired.
  8. Remove from grill and let rest for 5 minutes.
  9. Garnish with chopped cilantro and serve with lime wedges.
