Honey Lime Grilled Chicken Thighs are juicy and flavorful chicken thighs marinated in a sweet and tangy honey lime glaze, then grilled to perfection for an easy summer meal.
Ingredients
- 2 lbs boneless skinless chicken thighs
- 3 tablespoons olive oil
- 1/4 cup honey
- 3 tablespoons fresh lime juice
- 1 tablespoon lime zest
- 4 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili powder
- 2 tablespoons chopped cilantro for garnish
- Lime wedges for serving
Instructions
- In a large bowl, whisk together olive oil, honey, lime juice, lime zest, garlic, paprika, cumin, salt, black pepper, and chili powder.
- Add chicken thighs and toss to coat evenly.
- Cover and marinate in the refrigerator for at least 30 minutes or up to 4 hours.
- Preheat grill to medium-high heat.
- Remove chicken from marinade and place on the grill.
- Cook for 5-7 minutes per side until nicely charred and the internal temperature reaches 165°F (74°C).
- Brush with remaining marinade during the final minutes of grilling if desired.
- Remove from grill and let rest for 5 minutes.
- Garnish with chopped cilantro and serve with lime wedges.
