Ingredients

  • 1 box yellow cake mix
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 8 oz cream cheese, softened
  • 2 large eggs
  • 3 cups powdered sugar
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blueberries


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a bowl, combine cake mix, melted butter, and 1 egg until a soft dough forms.
  3. Press the dough evenly into the bottom of the prepared baking dish.
  4. In another bowl, beat cream cheese until smooth.
  5. Add 2 eggs, powdered sugar, lemon zest, lemon juice, and vanilla extract. Mix until creamy.
  6. Gently fold in the blueberries.
  7. Pour the cream cheese mixture over the crust layer and spread evenly.
  8. Bake for 35-40 minutes until the center is set and edges are lightly golden.
  9. Allow bars to cool completely before slicing.
  10. Chill for at least 1 hour before serving for best texture.
