Ingredients
- 1 box yellow cake mix
- 1/2 cup unsalted butter, melted
- 1 large egg
- 8 oz cream cheese, softened
- 2 large eggs
- 3 cups powdered sugar
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh blueberries
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a bowl, combine cake mix, melted butter, and 1 egg until a soft dough forms.
- Press the dough evenly into the bottom of the prepared baking dish.
- In another bowl, beat cream cheese until smooth.
- Add 2 eggs, powdered sugar, lemon zest, lemon juice, and vanilla extract. Mix until creamy.
- Gently fold in the blueberries.
- Pour the cream cheese mixture over the crust layer and spread evenly.
- Bake for 35-40 minutes until the center is set and edges are lightly golden.
- Allow bars to cool completely before slicing.
- Chill for at least 1 hour before serving for best texture.
Notes
- Fresh blueberries work best, but frozen can be used without thawing.
- Do not overbake to keep the bars soft and creamy.
