Description
A comforting rustic dish of tender chicken slowly braised in a rich tomato sauce with garlic, herbs, and aromatic vegetables.
Ingredients
- 4 bone-in, skin-on chicken thighs or drumsticks
- 2 tablespoons olive oil
- 1/2 small onion, chopped
- 3 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 2 tablespoons tomato paste
- 1/2 cup chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon sugar (optional)
- 1/4 teaspoon chili flakes (optional)
- 2 tablespoons fresh parsley or basil for garnish
Instructions
- Season chicken with salt and pepper.
- Heat olive oil in a large skillet or Dutch oven over medium-high heat.
- Sear chicken skin-side down for 5–6 minutes until golden brown, then flip and cook another 3–4 minutes. Remove and set aside.
- In the same pan, sauté chopped onion until soft, then add garlic and cook for 1 minute.
- Stir in tomato paste and cook for 1–2 minutes to deepen flavor.
- Add crushed tomatoes, chicken broth, oregano, basil, paprika, sugar, and chili flakes. Stir well.
- Return chicken to the pan, spooning sauce over the top.
- Reduce heat to low, cover, and simmer for 30–35 minutes until chicken is tender and fully cooked.
- Taste and adjust seasoning if needed.
- Garnish with fresh herbs and serve hot.

- Use boneless chicken for quicker cooking.
- Serve with pasta, rice, or crusty bread.
- Add olives or capers for extra flavor.
