Description

A comforting rustic dish of tender chicken slowly braised in a rich tomato sauce with garlic, herbs, and aromatic vegetables.


Ingredients

  • 4 bone-in, skin-on chicken thighs or drumsticks
  • 2 tablespoons olive oil
  • 1/2 small onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1/2 cup chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon sugar (optional)
  • 1/4 teaspoon chili flakes (optional)
  • 2 tablespoons fresh parsley or basil for garnish


Instructions

  1. Season chicken with salt and pepper.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
  3. Sear chicken skin-side down for 5–6 minutes until golden brown, then flip and cook another 3–4 minutes. Remove and set aside.
  4. In the same pan, sauté chopped onion until soft, then add garlic and cook for 1 minute.
  5. Stir in tomato paste and cook for 1–2 minutes to deepen flavor.
  6. Add crushed tomatoes, chicken broth, oregano, basil, paprika, sugar, and chili flakes. Stir well.
  7. Return chicken to the pan, spooning sauce over the top.
  8. Reduce heat to low, cover, and simmer for 30–35 minutes until chicken is tender and fully cooked.
  9. Taste and adjust seasoning if needed.
  10. Garnish with fresh herbs and serve hot.
