Ingredients
- 1 loaf day-old brioche or French bread, cut into 1-inch cubes (about 8 cups)
- 3 ripe bananas, sliced
- 4 large eggs
- 2 cups whole milk
- 1 cup heavy cream
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/2 cup salted caramel sauce, plus extra for serving
- 2 tablespoons unsalted butter, melted
- Flaky sea salt for garnish
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Spread bread cubes evenly in the baking dish and layer sliced bananas throughout.
- In a large bowl, whisk together eggs, milk, heavy cream, brown sugar, granulated sugar, vanilla extract, cinnamon, nutmeg, salt, and 1/2 cup salted caramel sauce.
- Pour the custard mixture evenly over the bread and bananas.
- Gently press the bread down to help it absorb the custard.
- Let stand for 15 minutes before baking.
- Drizzle melted butter over the top.
- Bake for 45-50 minutes, or until the center is set and the top is golden brown.
- Cool for 10 minutes before serving.
- Drizzle with additional salted caramel sauce and sprinkle with flaky sea salt before serving.
