Ingredients

  • 1 loaf day-old brioche or French bread, cut into 1-inch cubes (about 8 cups)
  • 3 ripe bananas, sliced
  • 4 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup salted caramel sauce, plus extra for serving
  • 2 tablespoons unsalted butter, melted
  • Flaky sea salt for garnish


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Spread bread cubes evenly in the baking dish and layer sliced bananas throughout.
  3. In a large bowl, whisk together eggs, milk, heavy cream, brown sugar, granulated sugar, vanilla extract, cinnamon, nutmeg, salt, and 1/2 cup salted caramel sauce.
  4. Pour the custard mixture evenly over the bread and bananas.
  5. Gently press the bread down to help it absorb the custard.
  6. Let stand for 15 minutes before baking.
  7. Drizzle melted butter over the top.
  8. Bake for 45-50 minutes, or until the center is set and the top is golden brown.
  9. Cool for 10 minutes before serving.
  10. Drizzle with additional salted caramel sauce and sprinkle with flaky sea salt before serving.
