Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract (for filling)


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in egg and vanilla extract.
  5. Gradually add dry ingredients and mix until combined.
  6. Fold in chocolate chips.
  7. In a separate bowl, mix cream cheese, powdered sugar, and vanilla until smooth.
  8. Scoop cookie dough, flatten slightly, add a small spoon of cheesecake filling, then cover with more dough and seal edges.
  9. Place cookies on baking sheet spaced apart.
  10. Bake for 10–12 minutes until edges are golden.
  11. Cool on a rack before serving.
