Ingredients
- 3 large eggs, separated
- 1/4 cup granulated sugar
- 1/2 cup strawberry puree (blended fresh strawberries)
Instructions
- Preheat oven to 160°C (320°F) and line a small baking pan with parchment paper.
- Separate egg whites and yolks into two bowls.
- Beat egg whites until foamy, then gradually add sugar and whip to stiff peaks.
- In another bowl, mix egg yolks with strawberry puree until smooth.
- Gently fold the egg white mixture into the strawberry mixture in batches.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 25–30 minutes until set and lightly golden.
- Let cool completely before removing from the pan.
- Slice and serve.

- Fold gently to keep the batter airy.
- Use fresh strawberries for best flavor and color.
- The cake will deflate slightly after baking—this is normal.
